However, in the great heat, we not only look for a cool place, but we also prefer light, preferably cold food in our food. Cold fruit soup is now a popular dish, but it also requires cooking. But who wants to cook in the scorching heat? The answer is clear, but then what do we eat?
It would be best to have food that you really wouldn’t have to stand by the stove to make, but to cook them without cooking and cool them that way.
There are such foods, especially soups, that can be prepared without cooking, only require refrigeration, and can also be consumed.
Many of the summer soups immediately come to mind the fruit soup, but the problem with that is that it requires cooking. Or we make the already very delicious fruit soups in the early, even cooler hours. We can also choose not to make our fruit soup in the usual way, but coldly. This requires raw or canned fruits, and our best friend in this case could be a good stick mixer. The desired fruits are cleaned, peeled, chopped and mixed with milk or vegetable-based milk, mashed with a stick mixer. The fruit can be fresh peaches or canned, it can be frozen forest fruit mix. You can add some water, lemon juice, grated lemon zest and sugar to the vegetable or regular milk.
Fruit can also mean melon, so if you like this fruit, you can make melon soup without cooking. All this without cooking, of course. It is necessary to add about 1 kg of melon, 280 grams of Greek yogurt, 125 ml of orange juice (preferably freshly squeezed), 80 grams of honey, a little salt. Scrape out the seeds of the half-cut melon, cut into slices and get rid of the peel. Chop the resulting fruit, add the yogurt, salt, honey and orange juice and just blend. Store in the refrigerator for 1-2 hours, after which it can be consumed.
In addition to fruits, we can also think of vegetables as excellent ingredients rich in fiber and vitamins. With the start of the cucumber season, we can take full advantage of this vegetable and turn it into soup. In addition to the cucumber, you will need 4 dl of yogurt, some garlic, dill, salt and olive oil. Grate the cleaned, peeled cucumber on a larger-grated cheese grater, add the yogurt, onion, chopped dill and salt to taste. It can also be consumed after cooling in the refrigerator, but it can be served immediately if ice cubes are added.
